These are a Few of My Favorite Things

For the sake of practicing my new skill (posting big pictures) and using my new camera, I have posted some of my favorite household items, foods, and beauty products. The pictures are a bit grainy when enlarged but I'm working on that issue.

Big Pictures

Slowly I am becoming more computer literate. I have spent the better part of the evening learning how to enlarge pictures on my blog. As you can see I have had great success (and without the help from my computer expert husband.) Now if I only knew how to post the website where I learned new trick from. Any help from you fellow bloggers? How do I post a web address in a post and then change the name so I can say..."click here" or "look at this."? Does that question even make sense?!

Anyways, this is the beginning of bigger and better (thanks to my new camera) pictures on my blog as well as a design makeover. It was time for a change. More to come....

More of the Same

We have been doing more of the same but oh so fun summer activities. Swimming...Aunt Lu's....cooking....diaper changing. Aunt Lu had a little girls afternoon gathering this week. I'll share a few pictures...

Yum...

These girls are all friends from our Monday night Bible study group. Stephen and I have been a part of this group ever since we moved to Montgomery. What a blessing they have been! We are still using diapers and wipes they surprised us with one Monday when we hosted before Stephen was born. And now he is two months old!!! Two of the couples are moving this summer and we will miss the SO much.
Stephen is lovin the pool...it feels like bath water.

Husband and baby still asleep...why am I the one that is always awake around here?!

More Summer Cookin

I've been cooking some pretty good stuff lately...if I do say so myself.

Spinach and Goat Cheese Pizza

Pillsbury Crust (found by cookie dough in the grocery store)

olive oil
1/2 onion sliced
marinara sauce
tomatoes
spinach
Italian cheese blend
Parmesan cheese
Goat cheese

Saute onions in olive oil until brown/caramelized.

For a crispy crust, bake the crust BY ITSELF on cookie sheet at 400 degrees for 9 minutes, then remove from oven, add toppings...spread marinara sauce on crust, then add onions, tomatoes, spinach, Italian cheese mixture, and finally the best part...goat cheese!!! Brush the edges with olive oil. Put back in oven...DIRECTLY on the oven rack (be very careful when you do this) to heat up toppings and melt the cheese. Remove when spinach is wilted and cheese is melted.

Pan Fried Squash and Zucchini

2 squash
1 zucchini
1 cup flour
1 egg
1 1/2 cup bread crumbs (panko are my favorite)
vegetable oil

Heat pan on medium heat, pour in generous amount of vegetable oil.
Prepare flour, egg (beaten), and bread crumbs in separate bowls.
Cut squash and zucchini into 1/2 inch slices.
Rinse squash and zucchini in water (helps flour stick)
Coat vegetables in flour, then in egg, then bread crumbs.
Pan fry on both sides until golden brown.

Dip in ranch dressing!!!

The Real Doctor


Growing up, my dad (a M.D.) was never as sympathetic towards our aches and pains as we would have liked him to be. I'd say something like..."my foot hurts when I move it." He'd reply "well don't move your foot." Not the answer I was looking for.

Once my sister asked my mom "what will happen if we get real sick and have to go to a real doctor?"

Well, that's what Stephen did today...went to his real doctor. Thankfully not because he was sick...just his two month check up to see our pediatrician here in Montgomery. He now weighs 12lbs 12 oz. He's so heavy. He's becoming really expressive too.

Been a pretty good sport today despite the 3 shots in the thighs.

The Freeman Club

We went swimming at my sister's house aka The Freeman Club late Saturday afternoon. It was SO relaxing to just float in the water for a couple of hours. Stephen and I got a HUGE kick out of floating baby Stephen on this float. He liked it, but we didn't leave him on there too long...only for the sake of pictures.





We came home after the long swim and made FISH FAJITAS!!! Yum. I pan seared some Amber jack, sauteed onions and peppers, add cheese, salsa, sour cream, avocado!!! Delicious.
This is a nice changed from chicken or beef. Any white fish would work. I've used Halibut and Tilapia before. Try them sometime.

100 degrees

I love Summer! Except for the blazin heat it is my favorite season. I love the lake, the pool, the grill, the fresh fruits and vegetables. There is so much fun and festivity to be had. I'm trying to make the most of it because time truly flies! Here are a few pictures of what we've been doing in this 100 + degree weather.

Me, baby Stephen, and Aunt Lu took a little trip to the farmer's market...bought some excellent tomatoes. Even though Stephen cried at every stoplight (he likes the car to move) on our way out there, it was worth the trip and we will definitely be going back.




Yesterday we had a little pool party at Aunt Lu's. Here's the Freeman collection of beach towels. I thought they were worth a picture.
Sweet Aunt Lu. It has been so fun having her out of school to cook for us. Oops, I meant to say play with us. She has made us some yummy meals though.
Also, she gave us a pack and play to use at her house. We have since taken over there a swing, a baby monitor, diapers, wipes, and a baby float that Stephen's a little too small for. Thanks for letting us junk up your house with baby stuff.
Stephen took a 2 hour nap yesterday which meant I was in the pool for 2 consecutive hours!!! It was a first. Everytime I try to swim at Aunt Lu's Stephen is fussy about something. Yesterday was a real treat. I even got a little sun burnt, which makes me a hypocrite in this family. I am a sunscreen fanatic...buy the highest SPF available and call husband when he's at the lake without me to remind him to reapply.


How about a good recipe?!
Salsa!!! You have to try it...so easy, so good.
28 oz can of diced tomatoes
1/2 large white onion diced small
1 teaspoon minced garlic (I use the kind from a jar)
3 tablespoons diced jalapeno peppers (again, I use the kind from a jar)
handful of cilantro chopped (this is my favorite part)

Put in the blender and blend.
You can use less or more of any ingredient depending on how you like it. Really... you need to make it. Taste so refreshing...you will never want Pace Picante ever again.
